Hello everyone around here, I hope you are in good health and with family. I have been looking forward to making something light and nutritious for dinner, besides making us feel satisfied and sleep well. The ideal is a big salad, in the fridge I have several fresh vegetables, most of them I plan to use raw because this way I consume the complete nutrients, as each one brings its nutritional value for the benefit of the body. The only ingredient I want to use cooked is the beets as I love their sweet taste but when cooked. I also want to make a dressing that when it's time to eat the salad we can drizzle it over the ingredients and enjoy the flavor even more. I remembered that mom is a fan of this type of salad and since I bought the vegetables I thought of every ingredient she used to make it just like she did. Mom always made sure that we liked raw vegetables in salads, even onions, which some people don't like raw, we love them alone in salads thanks to her. So I am going to start taking the ingredients out of the fridge, and although the vegetables must be well washed and it takes some time it is worth doing it, it is very pleasant to eat them with confidence. I know that in some countries the vegetables and greens that reach the consumer are already well sterilized and free of bacteria, they can be put directly from the packaging to the salad container, unfortunately here it is not so, one must be careful with vegetables and greens especially if they are consumed raw as I want them now. Hola a todos por aquí, espero estén bien de salud y en familia. Tengo días con ganas de hacer algo ligero y nutritivo para la cena, además de que nos haga sentir satisfechos y dormir bien. Lo ideal es una gran ensalada, en la nevera tengo varios vegetales frescos, la mayoría los pienso usar crudos pues así consumo los nutrientes completos, pues cada uno aporta su valor nutricional para el beneficio del cuerpo. El único ingrediente que quiero usar cocido es la remolacha pues me encanta su dulce sabor pero cuando está cocida. También quiero hacer un aderezo que a la hora de comer la ensalada podamos rociarlo por los ingredientes y disfrutar aún más de su sabor. Recordé que mamá es fanática de este tipo de ensaladas y desde que compre los vegetales pensé en cada ingrediente que ella usaba para poder hacerla tal como ella la hacía. Mamá siempre se encargó de que nos gustarán los vegetales crudos en las ensaladas, hasta la cebolla que para algunos no es agradable cruda, a nosotros nos encanta así sean solas en ensalada gracias a ella. Así que voy a empezar a sacar de la nevera los ingredientes y aunque los vegetales deben ser bien lavados y quita algo de tiempo vale la pena hacerlo, es muy grato comerlos con confianza. Sé que en algunos países los vegetales y verduras que llegan al consumidor ya están bien esterilizados y libres de bacterias, se pueden poner directo del empaque al envase para ensalada, lamentable aquí no es así, uno debe ser cuidadoso con las verduras y vegetales sobre todo si se consumen crudos como los quiero ahora. Pero es muy sencillo de hacer sin sentir que es una tragedia prepararla, la ensalada tendrá lo siguiente:

Cómo hablé de lo importante de librar de bacterias los vegetales voy a echarle al agua donde las voy a remojar, vinagre y bicarbonato. Voy a empezar por la lechuga, lavo cada hoja primero quitándole rastros de tierra que traiga y luego las echo en el envase para desinfectarlas. Hago lo mismo con las ramitas de perejil. También pelo la zanahoria y la cebolla y aprovecho de echarlas en remojo todo junto. Luego de unos 10 minutos los saco, empiezo a escurrir las hojas, ahora voy a rallar la zanahoria y reservo a parte cada uno para cuando se unan todos los ingredientes.

Ahora corto la col morada de forma delgada y alargada. La echo en un envase al remojo para desinfectar. Luego del tiempo necesario lo echo a escurrir en un colador y reservo a parte junto con la zanahoria rayada en un envase.

Por otro lado lavo bien la remolacha, la cortó en tres partes y la pongo en una olla con agua a hervir hasta que se ablanden. Cuando me aseguro que están listas, las saco de la olla, dejo que se reposen, les quitó la concha y las corto en ruedas delgadas, también las reservo para cuando toque armar la "gran ensalada" que quiero hacer, jajaja.

Para el aderezo, empiezo picando en trocitos pequeños el perejil que ya está desinfectado, lo echo en un envase. Luego pelo los ajos y los trituro para agregarlos al perejil. Empiezo a agregarle el aceite y el vinagre, incluso 2 cucharadas de agua potable, para que quede más liquido el aderezo.

Listo el aderezo y los ingredientes para la ensalada empiezo por poner en un plato de base las hojas de lechuga, luego "a divertirme"...colocando cada pieza de vegetales a mi antojo, buscando combinar los colores y que sea al final atractiva, que invite a comer, jajaja. Una deliciosa opción para la cena, la verdad que quedó "grande" así que con esta cantidad pueden salir 3 raciones abundantes. A nosotros nos gusta cuando hago este tipo de ensaladas, comer mucho, hasta saciar el gusto y quedar satisfechos y así fue, mi esposo y yo la comimos toda completa y quedamos llenos, jajaja... exageramos un poco pero valió la pena. Este tipo de ensaladas es una fuente de vitaminas y minerales que nutren al cuerpo, en el caso de perejil y la mostaza su vitamina C ayuda al sistema inmunológico y los demás vegetales están cargados de estas según sea su color. Está ensalada es una impresionante "bomba" de colores y nutrientes.

Se siente tan bien comer estos vegetales, la frescura y lo crujiente de cada uno más el sabor del ajo en el aderezo hace que comerlo sea un deleite.
