Green leafy vegetables are a fundamental part of vegan (and non-vegan) cooking. With their vibrant color, delicious flavors, and pleasant aromas, they are versatile ingredients for making all kinds of recipes. From salads to stews, green leafy vegetables are very nutritious and can add just the right touch of flavor, color, and texture to our dishes. However, they are very delicate and can deteriorate very easily, so it is necessary to take certain precautions to preserve them and extend their shelf life. Let's look at some practical tips for PRESERVING GREEN LEAFY VEGETABLES.

Within the group of green leafy vegetables are: lettuce, chard, cilantro, chives, leeks, among others. Many times, these vegetables are watered with grey water, and agrochemicals are applied to them, so it is essential to disinfect them very well and store them properly, thus extending their useful life.

### Now, what can we do to properly preserve green leafy vegetables? Let's look at some practical tips:

+ If you are going to use the green leafy vegetables soon, separate the leaves and wash them well with clean water: Often, residues such as dust, dirt, etc., are stored on the surface and underside of the leaves, and you may even see snail larvae and other species, which need to be removed from the vegetables. You can do this cleaning tip as long as you consume the vegetable soon, to avoid deterioration. REMEMBER THAT WASHING VEGETABLES ACCELERATES THEIR RIPENING. If you are not going to use them in two or three days, you can remove the dirt with an absorbent paper or napkin, then wrap them in another clean absorbent paper, place them in a plastic container with a lid or in a clean bag, and put them in the refrigerator. + Disinfecting vegetables: Once washed, proceed to disinfect them by immersing them in clean water with a disinfectant agent (vinegar, bleach, baking soda) for 30 minutes. Drain, rinse with clean water and remove as much moisture as possible from the vegetables. You can use a centrifuge to dry them even better. + Dry them very well with absorbent paper or napkins: This way they will be completely dry, and you will avoid the proliferation of fungi or bacteria. + Wrap them in absorbent paper or napkins: By wrapping them in this way, the paper will retain the moisture that the vegetables may exude, thus preventing their deterioration. Put them in a plastic container with a lid, or in a clean plastic bag, and take them to the refrigerator. + Storage: Once these vegetables are properly packaged, you can store them in the lower or middle part of the refrigerator, and check them periodically, replacing any paper that is too damp and checking their condition.

Los vegetales de hojas verdes, forman parte fundamental de la cocina vegana (y de la no vegana también). Con su vibrante color, sus deliciosos sabores y agradables aromas, son ingredientes versátiles para hacer recetas de todo tipo. Desde ensaladas hasta guisos, los vegetales de hojas verdes son muy nutritivos y pueden dar el toque justo de sabor, color y textura a nuestros platos. Sin embargo, son muy delicados y pueden deteriorarse con mucha facilidad, por lo que es necesario tomar ciertas precauciones para preservarlos y alargar su vida útil. Veamos entonces algunos tips prácticos para la CONSERVACIÓN DE VEGETALES DE HOJAS VERDES.

Dentro del grupo de vegetales de hojas verdes están: Lechugas, acelgas, cilantro, cebollín, puerro, entre otros. Algunos de éstos son más resistentes que otros, pero en general, tienden a deteriorarse fácilmente en comparación con otros vegetales y frutas. Muchas veces, estos vegetales son regados con aguas grises, y les son aplicados agroquímicos, por lo que es fundamental desinfectarles muy bien, y almacenarlos de forma adecuada, extendiendo así su vida útil.

### Ahora bien, ¿qué podemos hacer para conservar adecuadamente los vegetales de hojas verdes? Veamos algunos tips prácticos:

+ Si vas a usar pronto los vegetales de hojas verdes, separar las hojas y lavarlas bien con agua limpia: En muchas ocasiones, en la superficie y envés de las hojas se almacenan residuos, como polvo, tierra, etc., e incluso pueden verse larvas de caracoles y otras especies, los cuales es necesario de eliminar de los vegetales. Este tip de limpieza puedes hacerlo, siempre y cuando consumas pronto el vegetal, para evitar así su deterioro. RECUERDA QUE EL LAVADO DE LOS VEGETALES, ACELERA SU MADURACIÓN. En caso de que no lo vayas a usar en dos o tres días, puedes eliminar el sucio con un papel absorbente o una servilleta, para luego envolverlas en otro papel absorbente limpio, y colocarlas en un recipiente plástico con tapa o en una bolsa limpia y a la nevera. + Desinfectar los vegetales: Una vez lavados, proceder a desinfectarlos, sumergiéndolos en agua limpia con algún agente desinfectante (vinagre, lejía, bicarbonato), por un lapso de 30 minutos. Escurrir, enjuagar con agua limpia y retirar el máximo de humedad de los vegetales. Puedes usar un centrifugador para secarlos aún mejor. + Secarlos muy bien con papel absorbo o servilletas: Así quedan totalmente secos, y evitas la proliferación de hongos o bacterias. + Envolverlos en papel absorbente o servilletas: Al envolverlos de este modo, el papel retendrá la humedad que puedan exudar los vegetales, evitando así su deterior. Introducirlos en un recipiente plástico con tapa, o en una bolsa plástica limpia, y llevarlos a la nevera. + Almacenamiento: Ya debidamente embalados estos vegetales, los puedes almacenar en la parte inferior o media de la nevera, y supervisarlos periódicamente, sustituyendo el papel que esté muy húmedo y constantado el estado de éstos.
