The Cavalier is probably one of the most "normal" looking creature in The Alchemist Hut. His role in the hut is to carry messages of the alchemists via land, this was a role which was assigned later.
On the contrary, Raven was created with the role of courier in mind, parchment paper is visible. The arrow is symbol of speed and also gives an indication that the mean of transit is air.
