As lovely as homemade bread is, I have had weak wrists since I was a young adult (repetitive strain injury on the job) - meaning that kneading is quite painful for me (especially those hours later when my knuckles are swollen from the task). A bread recipe that doesn't require kneading is very useful for people like me!
As I'm going wheat-free again, I won't be making this one for awhile now, but it's still a good recipe if you're not too sensitive to wheat!
Here's what the final product looks like when I did them into mini baguettes... and smothered in butter.
Process:
Melt 4 Tablespoons of butter (half a US stick.) Let it cool a bit.
Meanwhile, mix together 2 cups warm water and 2 Tablespoons of yeast.
Note: when working with yeast, it's better to go too cool than too warm. Hot water will kill the yeast whereas cool water will just slow down its action.
Leave this mixture for about five minutes until nice and foamy.
Stir in the melted, cooled butter.
Mix in 2 eggs and
1/2 teaspoon salt
Again, it's really important to not use the butter when it's still too hot or you will kill the yeast.
Next, stir in 6 cups of flour.
And if you want to add some herbs, this is the time... (I added them late this time, but it still worked. I added some garlic and some Italian seasoning.)
Mix well and place in a greased bowl in a warm place, covered with a tea towel. Leave it until the dough has doubled in size.
(Note: I'm at high-altitude and it still worked very well.)
If it rises too quickly, punch it down and rise it a second time.
Now, it's ready.
I shape it into rolls and mini baguettes this time. Leave to rise again.

Preheat oven to 400F/200C. Bake 30-40 minutes. (I find that they cook a lot faster than I expected, so watch them closely!)
They are ready when you tap the bottoms of the rolls and they sound hollow.
Leave to cool - or cut them open immediately and melt butter into them - yum!!!
