This is one of the fanciest lava cakes I have made. It tastes so amazing, delicious chocolate and pistachio flavours come through with fresh vanilla cream. This is a perfect dessert to serve for your friends, dinner parties or for someone special.
Ingredients
100 gr fine white chocolate
3 tbsp butter
6 tbsp powdered sugar
2 eggs
1 egg white
4 tbsp cake flour / all purpose flour
1-2 tbsp matcha powder
a pinch of salt
2 tbsp of roasted pistachio nuts for inside and decoration also
served with whipped vanilla cream
Directions
Step 1 : In a bowl melt the white chocolate and butter in double boiler or microwave with 30 seconds repetition until it melts.
Step 2 : Add eggs and sugar in a bowl and whisk together.
Step 3:Add the white chocolate with butter and mix.
Step 4 : Add sifted matcha powder and then sifted plain flour. Mix everything until just combined.
Step 5 : Add butter and then flour into each ramekin. Pour the batter into ramekin or tins.
Step 6 : Let it sit in freezer for about an hour (it won't freeze the batter) well, if you want to make it in advance chill the batter in fridge before baking. Add few crushed pistachios if you wish into each ramekin.
Step 7 : Bake in the a pre-heated oven at 200C for about 10 to 15 mins, it depends on how big your mould is.
Step 8 : Serve with whipped vanilla cream, or ice cream and sprinkle pistachios on top. Enjoy!
