
Are you up for an easy, quick lunch wrap? The blue cheese pairs super well with the fresh peppery taste of the arugula. If you are not a blue cheese lover, feta, mozzarella, brie, camembert or any other cheese you like works too!
Ingredients
2-4 wrap or tortilla, depending on their size
1 big avocado or 2 small, chopped or cubed
1 cup tomato, sliced or cubed
3 cups arugula, roughly chopped
1 oz blue cheese or more to taste, crumbled
Pepper to taste
Directions (prep 5 min)
- Mix avocado, tomatoes, and arugula in a bowl. Season with black pepper to taste. Gently mix in the blue cheese.
- Top wrap with the mixture and wrap.
