5-minute Arugula Avocado Wrap with Blue Cheese

Are you up for an easy, quick lunch wrap? The blue cheese pairs super well with the fresh peppery taste of the arugula. If you are not a blue cheese lover, feta, mozzarella, brie, camembert or any other cheese you like works too!

Ingredients

2-4 wrap or tortilla, depending on their size
1 big avocado or 2 small, chopped or cubed
1 cup tomato, sliced or cubed
3 cups arugula, roughly chopped
1 oz blue cheese or more to taste, crumbled
Pepper to taste

Directions (prep 5 min)

  1. Mix avocado, tomatoes, and arugula in a bowl. Season with black pepper to taste. Gently mix in the blue cheese.
  2. Top wrap with the mixture and wrap.
