Crispy Chicken Fingers with Sweet Potato Fries and Herby Yogurt Dip


Comfort food with a healthy twist. Forget about store-bought chicken nuggets or chicken tenders. These crispy baked chicken fingers are so delicious and easy to make. Yummy as an appetizer too. Leave out the sweet potato fries and salad and serve with a glass of cava or prosecco and I’m sure you will impress your non-veggie dinner guests right from the start.

Ingredients (serves 2)

For the sweet potatoes

  • 2 medium sweet potatoes, cut into fries
  • 1 tsp dried oregano
  • ½ tsp paprika powder
  • 1 tsp garlic powder
  • 2 tbsp. olive or melted coconut oil (we used coconut oil)

For the chicken fingers

  • 12 oz. skinless, boneless chicken breast, cut into thick stripes
  • 1 egg, beaten
  • ½ cup flour of your choice
  • sea salt, to taste
  • black pepper, to taste
  • 1-1.5 cup panko or breadcrumbs
  • 1 tsp paprika powder
  • 1 tsp turmeric powder
  • 1 tsp ground cumin seeds
  • ½ tsp allspice

For the salad

  • 2 cups salad greens of your choice
  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, cubed

For the yogurt dip

  • ¾ cup plain unsweetened yogurt
  • 2 clove garlic, minced
  • sea salt, to taste
  • black pepper, to taste
  • 1 lime, juice only
  • ½ cup chopped chives
  • ½ fresh parsley or coriander

Directions

  1. Preheat oven to 400°F or 200°C.
  2. Add sweet potato fries and herbs to a baking sheet. Drizzle with a little olive oil and toss to coat. Cook in a single layer in the oven for about 30 minutes.
  3. Take three mixing bowls or plates. Add flour to the first one. Season with salt and pepper to taste. In the second bowl or plate add the beaten egg. In the third bowl place the breadcrumbs or panko and herbs. Mix well to combine.
  4. Using one hand coat chicken strips with seasoned flour on all sides. Using the same hand, move the floured chicken pieces trough the egg wash. Then take your other hand and move the chicken fingers to the breadcrumb mix. Make sure they are coated on all sides and place on a baking sheet sprayed with a little cooking oil. Bake until crispy on the outside and lightly browned. This will take about 15 to 0 minutes. Make sure the chicken is cooked through!
  5. Meanwhile was and cut salad ingredients and set aside. Whisk together all dip ingredients and set aside.
  6. When ready serve chicken fingers with sweet potato fries and salad. Drizzle with yogurt dip.
