Today is a great and beautiful day. Nice sunset, yummy breakfast and my hubby's niece and her boyfriend are arriving from Belgium in a few hours. Hope she brought some Belgium chocolates... :-)
Here's the beautiful sunrise btw.
Ingredients
For the green smoothie base
1.5 cups pineapple, chunked
1.5 bananas big, peeled, chunked, and frozen for extra creaminess
1 cup packed fresh spinach (or kale, bok choy, etc)
1/2 cup water (or nut milk works too)
Optional toppings
0.5 cup pineapple, chunked
0.5 bananas, peeled and sliced
2 tbsp dried goji berries
2 tsp chia seeds
Directions
- Combine all smoothie base ingredients in a high-speed blender. Blend until completely smooth. Add more water if needed. Pour the smoothie base into bowls.
- Top smoothie bowl with banana, pineapple, goji berries, and chia seeds. Or use other fresh fruits and superfood of your liking. Granola, cacao nobs, mulberries, coconut flakes, etc are all good options.
FYI: If you like an ice cream consistency, freeze all smoothie base ingredients, except for the liquid base and blend while the ingredients are still frozen.
