Quick Healthy Chocolate Snack: Vegan Chocolate Truffles

These vegan chocolate balls are just pure bliss for every chocolate lover. While they don't taste like the real Belgian chocolate truffles, their taste comes pretty close, and they are healthy... meaning you can eat them more often... so good news for the chocolate lovers.

These truffles are loaded with the most amazing, energizing superfoods, including extra virgin coconut oil, maple syrup (or raw honey), raw cacao, and dates.

And what's more, they are super easy to make. Depending on how fast you can roll, you can have 24 chocolate truffles in less than 10 minutes..... And the best part… they are super easy to make! Depending on how quick you can roll, you can have two dozen in just 10 minutes or less!

Ingredients (makes about 24 to 26 truffles)

2 cups soft dates, pitted
2-3 tbsp of raw cacao or carob powder works too
2 tbsp melted extra virgin coconut oil
2 tbsp maple syrup (or raw honey for non-vegans), I used maple syrup
1 tsp almond or vanilla extract (optional)
¼-⅓ cup shredded coconut

Directions

  1. Combine all the ingredients, except shredded coconut, in a high-speed blender or food processor. Blend or process until you have a uniform consistency. Use a tamper or spatula to push the mass down if needed.
  2. Roll the mixture into small balls and roll them in the shredded coconut until they are well coated.

Recipe notes

  • Though you can eat them right away, they taste so much better (and are firmer too) after you chilled them in the fridge for an hour or so.
  • Also, this recipe is the basic recipe feel free to use different coatings (cacao powder, orange zest, or finely crushed nuts are great options) or add additional ingredients such as goji berries, orange zest, mint, crushed seeds or nuts. Be creative!
