Nothing better than a strong black coffee and a yummy sweet treat after a lovely meal. Made these crunchy easy vegan and gluten-free treats the other day to take to a cookout and share with my beloved friends.

We had so much fun. And what's even better.... we have the rest of the week off and no real plans. Except a 2-day island visit to soak up some beach vitamins.

Think we all deserve some peace and rest after the past hectic months. Life has been a rollercoaster and time has flown by. That's why now is the moment to take a step back, relax and slow life a little down before we start our next chapter in the bakery.

CRUNCHY CHICKPEA FLOUR CHOCOLATE ALMOND COOKIES (GF-FREE, VEGAN)

INGREDIENTS


  • ΒΌ cup almonds,

Dry ingredients


  • 1 cup chickpea flour
  • Β½ cup raw cacao powder
  • ΒΎ tsp baking powder
  • ΒΌ cup desiccated coconut
  • Β½ cup old-fashioned rolled oats (certified gluten-free), lightly blended

Wet ingredients


  • 1 chia egg (1 tbsp chia seeds + 3 tbsp water)
  • Β½ cup extra virgin coconut oil
  • ΒΌ - β…“ cup raw palm sugar
  • 2 tsp vanilla extract
  • 2 tbsp raw coconut nectar

DIRECTIONS


  1. Make the chia egg by combining chia seeds and water. Stir well and let sit for a few minutes.
  2. Meanwhile, pulse the oats in the blender a few. In a mixing bowl, combine the oats with all other dry ingredients and stir well to combine. Set aside.
  3. Combine all wet ingredients in another bowl. Wish well to combine.
  4. Combine the dry and wet mixture. Stir until all ingredients are well incorporated. Pulse almonds in a blender until slightly broken up. Add to the mixture and stir to incorporate.
  5. Roll the dough into a big sausage. Wrap in baking paper or cling wrap and let sit in the fridge for 30 minutes.
  6. Preheat oven to 230C or 450F.
  7. Cut the sausage into cookies and place them on a baking sheet lined with baking paper.
  8. Bake for 10-20 minutes. Depending on how thick you cut them.
  9. Let cool. Enjoy with a nice cup of coffee or tea.
