Tacos de Placeros

One of the things I love about Mexican is the simplicity. Another I love is the taste. We ate this delightful dish at the new Barrio Bonito in Bangkok, and sat at home now writing this, I am desperately craving to eat them again.
The flavours blend perfectly, the sharp salty corn being counteracted by the smooth, mellow avocado, and the salsa adding all sorts of interesting complexity to the mix. The pork skin was just the right texture so it didn't crack your teeth but maintained firmness and flavour. All things considered, its a winning combination, and today it was prepared just right.
