Pepitone tortillas // Step by step

Here I present a delicious popular and traditional recipe from my state of Sucre.


Pepitonas Tortillas




The state of Sucre has a great variety of seafood for which we can make different dishes very delicious and nutritious. Among them we find: The pepitonas tortilla.


Here are the ingredients to be used:
  • 1 kilo of pepitones
  • 2 onions
  • 8 sweet peppers
  • 4 cloves of garlic
  • 3 eggs
  • Pepper
  • Curcuma
  • Salt to taste

How do you make this delicious Pepitona Omelette?

Here are the steps to follow:


  • Wash the pepitones very well and remove the dirt left on the shells and remove the edges.

  • Then wash with lemon juice and cut into very small pieces.

  • In a pot with water and salt point place the pepitones for 30 minutes to soften them.

  • The onion is diced and the peppers are chopped separately.

  • In a frying pan fry the onion already chopped and the peppers.

  • Then add the chopped pepitones, and a cup of boiled water add the crushed garlic cloves, salt, pepper and a teaspoon of turmeric for color.

  • Let this stew cook for 20 minutes and if necessary and cook longer.

  • Ready the stew.

  • Then beat the eggs, add salt and put half of this mixture in a frying pan, cook over very low heat, add the stew and another layer of egg mixture.

  • Let the tortilla cook until it sets, and turn to brown on both sides (with the help of a plate).

  • Ready to taste this delicious dish

This delicious tortilla can be served with rice, arepas, cassava.
