CARROT & CHICKPEA SOUP – a hot winter soup to warm the body

A great soup on a cold day. Easy to make and does not take long either. This portion will be enough for 3-4 people. Make a big portion and you will have for lunsj next day.


1 clove of garlic
1 tablespoon olive oil
8 carrots
1 teaspoon cumin
2 boxes chickpeas or precooked 200 gram
1 piece ginger approx. 2 cm
4 dl coconut milk
1l vegetable broth
Salt, pepper, lime juice

Warm the oil. Chop garlic , ginger and carrots cut into smal pieces. Warm the oil and fry the vegetable. Then add cumin, chickpeas, coconut milk and broth. Cook for 25-30 minutes. When cooked use a food processor until it becomes a smooth soup. If too thick, add a little more broth. Add salt, pepper and a little dash of lime juice.


Serve with a spoonfull of yoghurt (natural) and coriander or parsley. The soup is ready to serve.
