Hi guys, as I promissed yesterday, today I want to present you a really delicious recipe! It is another recipe from my new HelloFresh food box and this time it´s a Jamie Oliver recipe, who is cooperating with Hello Fresh. This is my own english translation of the original german recipe, which you can find at the end of this article.

Description:
This court is a tasty & quick alternative to chilli con carne and it contains delightful vegetables, for example a sweet potato. Sweet potatoes are containing a big portion in strength, but they can be counted absolutely to the kinds of vegetable. Moreover, they deliver an high amount of nutrients, for example vitamin C. The home-made tortilla stripes are wonderfully crunchy. You could cut the tortillas also in triangles, then there originate the tortilla chips which are very healthy and mainly really tasty!Ingredients:
(You can adjust them according to your own taste)- 160 g of natural rice
- 2 spring onions
- 1 fresh red chilli (Of course I took two from my balcony)
- 1/8 garlic toes (Of course I took 2 pieces garlic)
- ½ red pepper/paprika (Of course I used the whole one)
- 1 big sweet potato (about 200 g)
- ½ teaspoon chili powder
- ½ teaspoon smoked paprika powder
- ¼ teaspoon cumin seeds
- 1 tin of egg tomatoes (400 g)
- 1 tin of black beans (400 g)
- 2 wheat tortillas
- 15 g of coriander green
- 2 tablespoons of yoghurt
- 1 lime
Preparation:

1. Preheat the oven to 180 C°. Cook the rice in cooking salted water about 25 minutes softy. Pour the water away in a sieve and let the rice drain well, then give it back again in the pot. Spice it with black pepper, cover the pot and put aside.
2. Meanwhile cut the spring onions. Seperate the green and white rings.
3. Cut the chili peppers and remove the seeds, if you don´t want it so hot. (I didn´t removed it) Remove the seeds of the paprika (sweet red pepper) and cut it. Peel the sweet potato and rasp it.
4. Heat up 1/2 tablespoon oil in a frying pan at medium heat. Add the white rings of the spring onions, Garlic and the chili. Then add the chili- and smoked paprika powder and the cumin seeds. Stir-fry everything about 2 minutes.
5. Add paprika and sweet potatoe. Then add the tomatoes and some water (I took water from the rice, because fresh water takes away some of the taste) . Crush the tomatoes with a spoon.
6. Boil up everything. Pour away the water of the beans in a sieve, wash them and let them drain. Add them in the pot and simmer the chilli about 25 minutes, until the sauce is thickened.
7. Roll up the tortillas und cut them into 1 cm wide strips. Turn them in oil and distribute them on a baking tray. Bake them until they are golden brown and crunchy.
8. Pluck off the leaves of the coriander and hack them.
9. Spice up the chili in the pot with salt, pepper and lime juice.
10. Add the yoghurt and the green rings of the spring onions. Distribute the rice on plates. Spread the chili and coriander on top. Serve it with the crunchy tortilla stripes. Ready: Enjoy this amazing atumn dish!
