Roasted Asparagus with Mountain Ham

Food is one of life's little pleasures and this tasty starter is one that is quick and easy to prepare.

Ingredients:

2 tbsp Spanish olive oil
12 slices serrano ham
12 asparagus spears
pepper
honey or maple syrup to dress

Method:

1 Preheat the oven to 200oC/400oF/Gas Mark 6.
2 Lightly oil a roasting tin (or pizza baking tray) that will hold the asparagus spears in a single layer.
3 Wash and trim the ends of the asparagus spears.

4 Wrap the ham around the stem of each spear (diagonally).

5 Place prepared stems in baking tray and lightly brush with olive oil and season with pepper (if desired).

6 Roast for about 10 minutes (depending on thickness of asparagus) until tender but still firm.
7 Serve drizzled with honey or maple syrup.

Other Suggestions:
Any type of oil may be used according to your preference and availability.
If you cannot source serrano ham, try parma or even bacon (cooking times may vary).
Use as many slices of ham as you wish to wrap your spears.
Wrap two spears at a time if you desire a bigger bite.
The starter may also be served with aioli (garlic dressing).
