Blueberry Waffles

I wanted to share the mix I make for waffles with fresh fruit added. I have chosen blueberries but this also works with strawberries, cherries, or any other fruit that can be heated for a short time.

Here is a list of the ingredients you need.

The ones on the left should be whisked until fluffy. Then slowly blend in the powder mix.


Whisk in a bowl.Blend and add to liquid.
2 eggs2 cups of flour
1 3/4 cups milk4 tsp baking powder
1/2 cup oil1/4 tsp salt
2 tbsp sugar

Add sliced berries to your batter just before cooking.

It helps to use cooking spray before spooning the batter into your waffle iron.

It is quite normal to have open places on the waffle iron. The waffles will expand to fill those (adjust the amount you are using if not.)

Your waffle iron should have a light on it to tell you when they are done. You should have some sort of rack to place them on so they are able to cool on both sides.

Enjoy! These are wonderful while they are hot. If you have freezer bags, you can freeze them and they work quite well in the toaster.

As someone who lives in a country where toaster waffles are not sold, I make 30 or more just to freeze!
