Italian Wedding Soup ... Making comfort food on this cold, dreary day


Everyone loves that comforting feeling homemade soup brings to the soul, especially on a cold, wintry day.

Escarole soup or often referred to as "Italian Wedding Soup" is definitely in the category of comfort food. This delicious soup smells amazing as it simmers on the stove, delighting your senses and stirring the memories of when mama used to make it.

This soup is so simple to make and you can literally add whatever you want to make it unique to your liking.



"Ingredients"


The basic bones of the soup consist of: Escarole - hamburg - celery - onion - garlic - beef broth/beef bullion - water - Italian seasoning - Ramano or Parmesan cheese.

Some optional ingredients may include: Carrots - pepper - small pasta - rice.



"Wash Escarole & Drain"





"Chop Into Small Chunks"





"Saute"


Start by chopping your vegetables and saute the onion and celery, simmer till slightly translucent. Meanwhile prepare the meatballs while this cooks.

If your using garlic and peppers add them after the onions cook a bit.



"Add Breadcrumbs & Seasonings To Hamburg"





"Add Egg & Mix Well"





"Make Bite-sized Meatballs"





"Saute Meatballs Till Browned"





"Add Beef Bullion & Water OR Beef Broth"





"Add Chopped Escarole"





"Simmer Until Escarole Is Tender"





"Serve With Your Favorite Bread"





"Sprinkle Liberally With Cheese"

p.s. I did not include ingredient amounts for this recipe, as that would be determined by how huge a batch of soup you desire. Besides, an Italian cook rarely measures..... just saying! ;-)
