The greatness of this recipe is simply that it combines the two best things in world: bread and potato. Don’t try to convince me otherwise, it’s the truth!
So, fresh bread straight from the oven, anyone? I know I’m up for that anytime. This bread recipe I’m going to share with you isn’t a typical one. I felt that today is a great time to share with you another Finnish recipe which is really close to my heart. Believe me, this bread is!
If you have leftover mashed potatoes to get rid of, don’t throw them away! You want to use them for this quick and easy (my favorite words when it comes to cooking) bread, and believe me, you won’t regret your decision. Usually when I make mashed potatoes, I make too much so that I can bake these goodies. Feel free to double the recipe, or even quadruple like I did the past weekend... 😄
Finnish Potato Bread • the recipe makes 7
Ingredients:
3 dl cold mashed potatoes
2.5 dl all-purpose flour
0.75 dl water
2 tbsp vegetable oil
1 tsp salt
Method:
Mix all the ingredients in a bowl. The dough should be quite thick and a little sticky. Use floured hands to make round flat breads onto a baking tray. Spike them a couple of times with a wet fork. Bake at 250 °C (= 480 °F) for 10-15 minutes (as long as you get some brown spots).
Enjoy with (vegan) butter or cheese!
