My Ouma (Grandma) Ena lost her Mom at the tender age of 5, but Great Grandpa remarried the dearest little lady who was known to everyone as Oumatjie (a diminutive form of the term Grandma).
Oumatjie ensured that her new daughters all learnt how to cook and bake, and cook and bake my Ouma excelled at!
Today I'm sharing with you my Ouma's recipe for Soetkoekies (Sweet cookies).
The cookie tins would always be filled to the brim for the Christmas holidays, a very special family time, although these holidays are going to be quieter, as we're currently experiencing a rampant second Covid wave here in South Africa!
Christmas just ain't the same if I don't have at least a couple of tins filled with these traditional cookies as they have a way of disappearing very fast; nutty and crunchy and some of them topped with Royal Icing, which is a tradition I started by the way as it really satisfies my sweet tooth and look festive with the green and white icing with colourful sprinkles.
Ouma had seven children and knew how to turn simple ingredients into something delicious, having lived through the Depression years. This makes a large quantity!
The Recipe
- 6 cups Self-Raising Flour
- 1/2 tsp Salt
- 3 cups Sugar
- 2 cups fine Coconut
- 500 gram softened Butter
- 3 Xlarge Eggs, beaten
Mix dry ingredients, rub butter in and lastly add eggs, mix to a firm cookie dough.
Roll out thinly on a floured board and press into shapes with cookie cutters.
Place on sprayed cookie pan and bake 10-15 min or till straw coloured at 180°C.
Carefully remove with spatula and leave to cool on wire racks.
These cookies has to be stored in airtight containers and are nice without the frosting, but it's Christmas time and we all need a little brightening up not so!
Royal Icing for cookies
- 1 cup Icing Sugar
- 2 Tbsp Milk
- 1 tsp Corn Syrup
- Couple of drops of Food colouring
Beat all together till glossy and use to decorate the cookies.
