Delectable, creamy, garlicky, flavoursome and ambrosial is how I would describe this Luscious Mushroom Sauce; perfect for serving with Pasta, Baked Potato, or whatever else takes your fancy!
I would lay my head on a block that a good sauce is what makes many a dish stand out!
See this Baked Potato; doesn't look very appetizing all on its own, does it?
Lather it in a Luscious Mushroom Sauce and this plain old Spud becomes a meal all on its own.
There are numerous types of sauces like
Butter Sauces, Hot Sauces, Sweet Sauces, Fish Sauces, Brown, Green, Pink, Red and White Sauces...almost any colour of the rainbow!
- Emulsified Sauces like Hollandaise Sauce made with egg yolk, butter & lemon juice, seasoned with salt & pepper, and is the main ingredient of Eggs Benedict.
- Tomato Sauces like plain old Ketchup or Tomato & Basil Pasta Sauce.
- Meat-based Sauces which we could be a Bolognaise Sauce or a simple Gravy.
- White Sauces like Béchamel sauce which originated in Italy and is made from a white roux (butter and flour) and milk, and is used to make Lasagna.
Today however, I will be sharing with you how to make the best creamy garlicky and Luscious Mushroom Sauce which is made with...
- 50 gram Butter
- 2 large cloves Garlic, crushed
- 1 Onion, finely diced
- 200 gram Button Mushrooms, sliced
- 200 ml White Wine (or fresh Lemon juice & stock)
- Fresh Thyme
- French Chives, finely diced
- 250 ml Sour Cream
- Salt & Black Pepper
- 3 tsp Corn Flour
- 200 ml Full Cream Milk
- 3 Tbsp grated Parmesan Cheese
Sautee onions & garlic till it starts to caramelize.
Add Mushrooms and sautee a little longer.
Add white wine & thyme and cook till liquid is slightly reduced.
Add sour cream, milk, seasoning and thicken with corn flour.
Add chives & Parmesan cheese.
Served with Farfalle Pasta
Served with Baked Potato
