Certainly makes good sense that breakfast should be the most important meal of the day as our bodies need the best kind of fuel to keep us going for our busy days. Of course we should be getting that from a well balanced diet and not from a high caffeine energy drink that many consume to kickstart their day as that is just downright harmful!

Breakfast in Bed sounds so good, BUT if you're a night owl like me, you certainly will be way too bleary eyed and not at all keen to get up at the crack of dawn to have a hot cooked breakfast ready for that special man or woman in your life not so!

The secret of course is choosing something that can be prepped the night before, and the easiest yet is a Bread & Butter Pudding; I'm not talking about the usual sweet dessert we would serve after a meal, although one can actually make a really nice fruity breakfast pud using fresh apple cubes, berries, sliced banana or even pears.

However, I will show you how to make a delicious and satisfying Tuna & Shallots Cheesy Bread Pud that only takes 12 minutes in the microwave, really quick and easy PLUS as with most of my cooking, I've used ordinary pantry staples we all have on hand so no need to don masks for a store visit to go hunting for exotic ingredients!

Tuna & Shallots Cheesy Bread Pud Recipe

Place into oven dish:

  • 3 slices homebaked Artisan Bread, lightly buttered & cubed
    Beat together the following liquids & add seasoning of choice
  • 100ml Full Cream Milk
  • 100ml Double Cream Greek style Yogurt
  • 2 Xlarge Eggs
    Arrange the following on top of bread
  • Small can flaked Tuna
  • Fresh garden herbs - Parsley, Fennel, Thyme & Spring Onions, diced
  • 200ml grated Cheddar Cheese
    Pour liquids over
    Bread Pud can be left in refrigerator overnight at this stage and be taken out early morning to save time.
    Bake in Microwave oven on Medium setting for 12 minutes, not longer. Leave to rest for 5 minutes.
