We can thank the Romans and the Greeks of the 1st century not only for Aqueducts and Philosophy, but also for Salads!
For many centuries salads were only made with fresh raw ingredients, usually greens served cold, with a Vinaigrette dressing, but cooks have evolved since then.
We now add cooked ingredients to our salads; noodles, smoked meats, potatoes, beans and legumes and so forth, and even serve warm salads, especially in winter!
I decided to make an old favourite and I must thank @qurator for this theme as I had forgotten all about this really delicious warm Potato & Bacon Salad.
No mayonnaise here as per the usual Potato Salad which by the way, originated in Germany; this one is topped with crispy fried Bacon, diced Spring Onions and drizzled with a mustardy sweet & sour Apple Cider & caramelized Onion dressing.
Warm Potato & Bacon Salad
Boil till cooked:
- 4-5 medium Potatoes
Fry till crispy: - 6 rashers diced Bacon
Remove from pan, then sautee in bacon oil till onions are caramelized:
- 1-2 Tbsp Mustard Seeds
- 1-2 Onions, diced
Add the following & cook till dressing is slightly reduced: - 3/4 cup Apple Cider Vinegar
- 1/4 cup Brown Sugar
- 1/2 tsp Salt
- 1/4 cup Water
Pour over diced potatoes
Top with crispy Bacon bits and: - 1 bunch Spring Onions, diced
