Given how much I've been posting about food this year, you might get the feeling that I've been neglecting food preparation quite a bit and that I'm neither cooking nor eating anything. Which of course is not true. I still eat the same, if not more than before ...
The last recipe I posted was Night pizza on the grill about two months ago. Today's is from the beginning of summer, and as you can see it took a while before I got it ready to post.
But, regardless, here we have one vegetable recipe, breaded zucchini, which is good both in summer and winter if only we have the ingredients at our disposal.
If you grow your own vegetables, you know that when it's zucchini season, if you don't pick one as soon as it's young, it can suddenly become a huge, multi-kilogram pumpkin in a matter of days, and therefore mostly inedible. You can't usually eat as many as they grow. In that case, at least here, they are breaded and sometimes even frozen; they can last for several months in the freezer.
Young courgettes are usually stewed or stuffed, and sometimes prepared raw in a salad with other summer vegetables.
But what to do with bigger ones, like the ones in the crate?
Breading and frying as if you were preparing Wiener steaks.
It's easy to prepare, but you get a lot of pots dirty and messy.
What do we need?
- zucchini, cut into circles or rectangles
- plain white or other flour
- 2-3 eggs
- breadcrumbs
- oil for frying
- salt and pepper and other spices as desired
Cut the zucchini into roughly equal pieces, rounds, or rectangles.
Each piece is first coated in flour
Then place the pieces of zucchini that have been rolled in flour in a beaten egg, seasoned with salt and pepper to taste.
Finally, roll each piece in bread crumbs.
You can also add some spices to the bread crumbs. If you want to make it crispier, you can add crushed cornflakes or, for more flavor, a tablespoon of grated Parmesan cheese.
And then we put them on a plate somewhere.
Zucchini prepared in this way are delicious for all family, but, as I mentioned before, it takes a long time to prepare it all, and a lot of utensils are used, not to mention the mess...
Now all that is left to do is to fry this quantity of breaded zucchinis.
We need one pan into which we pour at least half a liter of oil heated to 200 degrees Celsius. For this we use ordinary sunflower oil, otherwise, we could also use olive oil because it makes the zucchinis tastier, but it's too expensive here and it's a waste to use it for frying.
Fry the breaded zucchinis in boiling oil for about 4-5 minutes until golden, turning them once during this time.
Finally, after all the preparation and frying, the zucchinis are ready.
And, then serve them.
We usually serve them as a side dish for almost any dish, here in the photo, with fish and pickled green beans.
But they can also be served on their own. There are always too few of them anyway :) 😋
