This soup is one of the dishes my mom often cooked for me when I was young, and until now, when she is a grandmother of 4 kids, she still usually cooks this for them. I've always wondered why this is a regular dish in my family meals, especially during the exam seasons when I had to stay up late studying or when someone complained that lately I looked too thin, my mom always made it. Lately, since I had my own little family, I started looking for healthy recipes to cook and found out it is a nourishing meal. Providing iron, it has a tonic effect on the blood. For people with blood pressure disease, beetroot soup is a dish that should be used regularly because of its health benefits.
The soup by itself has enough nutrition which is the good combination of root vegetables and pork ribs. We do have choices to eat it with rice, bread or pasta. Mostly in Vietnamese meals, we serve this kind of soup with rice. But if you are on a diet and like cutting carbs from your daily meal, perfectly the soup can just go by itself. I like to have a hot bowl of this soup during the winter days, or even when I feel sick and nothing tastes good when it comes to my mouth, then soup is always the best choice. For the kids who hate to eat vegetables, the color of the soup attracts their attention and makes them eat even more.
Ingredients (for 3 servings)
All of the ingredients below are easy to find at any market.
- 1 Carrot
- 1 Beetroot
- 3 Potatoes
- 1 Brown Onion
- Green Onion and Coriander
- 200g Pork Ribs
- Salt
- Chicken Powder
How to make
- Carrot, beetroot, potatos: peel the skin and cut them into bite-sized pieces
- Pork ribs lightly boiled in hot water, rinsed and marinated with 1/3 tsp salt, 1/2 tsp chicken powder, leave it at the cool place for 15 minutes
- Put a bit of oil in a pot, add onions until it fragrant and stir the pork ribs in the same pot until it's half cook. Pour 1,5 litters of water into a pot and bring it to a boil.
- Leave the pot on the high heat, put the beetroot in and let it boil for 8 more minutes before adding carrot and potatoes. Let it simmer for another 10 minutes.
- Chop the green onion and coriander in small pieces, add them on the top when serving.
It's super easy to make and take only about 30 minutes to prepare and cook. The ingredients are just so simple which you can easily find at any market. I hope you enjoy this!
