How to Make Fermented Hot Sauce - This Fresh Batch Is AMAZING

Last night while my son was getting his massage therapy I needed something to do that was out of the way and quiet so I processed this batch of Fermented Hot Sauce. The peppers have been fermenting in the pantry for over a month so I figured now was a good time to get it strained and bottled.

This blend of peppers is about half Tabasco Peppers for heat and about half of sweet peppers. Those were a mix of Banana Peppers and Bell Peppers. All the Peppers were grown in the Daddykirbs Garden. There is a bit of garlic in the mix as well.

This part of the process is easy. I simply poured the mash into a strainer, then pushed on the mash until all the juice ran into a container below. In the video at the bottom of this post I added an extra step by adding thickener, but in this batch I decided I didn't want to add the extra ingredients.
