Happy Monday!
In today's short video you can see some clips that I took while making this simple fig cake. We have a fig tree in front of our house and now that the figs are ripe and soft, there's way more than we can eat. So last night I found some recipes online and decided to make this one - it's easy and simple, just how I like it. :D
HERE is the link to the original recipe (in Serbian) that I am going to write in English, just in case someone's interested in trying it out.
BISCUIT:
- 4 eggs
- 6 tablespoons oil
- 2 tablespoons cacao
- 2 tablespoons flour
- 1 teaspoon vanilla sugar
- 4 tablespoons sugar
- pinch of baking powder
- figs as needed;around 15 pieces - cca 300g (I think I used 11-12)
GLAZE:
- 100G of chocolate
- 1 teaspoon margarine or 6 teaspoons oil (I used margarine)
MAKING:
For the BISCUIT: separate egg whites from the egg yolk. In the eggs yolk add oil, cacao, vanilla sugar, flour, baking powder and mix with a fork. (I started with a fork but then switched to the egg beater).
Beat the egg whites with a hand mixer then add sugar and mix until you get a smooth, solid texture. In the first mixture, slowly add egg whites and mix until combined.
Using a baking tray, dimensions 20*30, make it greasy (I used margarine again) and use some flour over it. Pour in the biscuit mixture and add figs - I sliced them in half and separated them a little bit as you can see in the video, so that they fit into a square when cutting the cake. Bake in a pre-heated oven on 170 degrees Celsius, for 20-25 minutes.
For the GLAZE: break the chocolate into smaller pieces and put it in the melted margarine or heated oil and mix until it's smooth and melted, on low heat. With a spoon, pour the chocolate over the figs, when the cale cools down a little bit. You can also use more chocolate and cover the entire cake, if you prefer.
Bon Appetit!
