Welcome to the 1st Friday Night Food Fight of 2020!
Today I made Herb Chicken Tortellini as requested by my son who is home on break from college. Since he loves his tortellini smothered in alfredo sauce while I prefer mine in olive oil, I prepared the pasta both ways.

This is a fairly easy meal anyone can make. Best part is you can personalize the tortellini by using your favorite sauce (Alfredo, red, or vodka sauce) or just toss in olive oil and add seasonings.
The two tricky parts are not to overcook the tortellini by boiling too long as well as to keep an eye on the alfredo sauce, stirring frequently with a wooden spoon so the sauce doesn't stick to the bottom and burn or boil over the saucepan.
Don't worry -- it happens to the best of us and you can just start over.



Ingredients I use (minus the wine)


Packaged Herb Chicken Tortellini
I start by heating about two tablespoons of EVOO (extra virgin olive oil) in a saucepan and add minced or chopped garlic to it, stirring until the garlic is lightly browned. Next I add the heavy whipping cream and stir frequently until it starts to bubble and thicken at which point I turn the heat down to low.
Tip: Add black pepper and garlic salt to give the sauce more flavor.



While the alfredo sauce is getting ready, I get an approprately sized pot for the tortellini to boil in, add water, a pinch of salt and turn the burner on medium-high till it's covered in bubbles.



At this point, add the tortellini and set a timer for 5 minutes so you don't have a senior moment and end up with floating boiled slop.

Keep stirring the alfredo sauce with the wooden spoon again and again. See how it's thickened nicely!


Check the boiled tortellini for "floaters" rising up and covering the top of the pot.




When they look like this, the tortellini are ready. Strain them in a colander to remove the water and prevent overcooking.
Do not rinse the tortellini with water!


Plate the tortellini and add either the alfredo sauce or olive oil and seasonings.

Homemade Mixed Salad
I served the tortellini with a bowl of fresh mixed salad and a whole grain roll for a delicious homemade Italian dinner.
The finishing touch was a bottle of Red Diamond Merlot wine my mom brought me for Christmas. I have been known to enjoy having my dessert in the fluid form of wine!
