When it comes to post-processing, I generally aim for minimal work. I prefer to have the pictures tell the story without it being skewed by some ideal, artificial view. Of course, it is necessary to tweak certain aspects but looking back several years, I think I over-processed my images. It is also possible that I am better at capturing what I see. These days, it is very easy to filter images and saturate colours to enhance the reality and many people prefer it this way. The images I got from this particular sunset required very little post work though as it was amazing IRL. It went through many stages and included storm clouds and very isolated showers caught in the light. One of the most memorable times shooting that I have had.
