SHRIMP AVOCADO BOAT

As most of you know, I am not a chef. So I'd gladly want to take part of this week's prompt of the Qurator's Hive Top Chef--AVOCADO, because it doesn't require much cooking. 😛

It has been part of our everyday life to have vegetable salad, preferrably every morning, ever since my father had a stroke a couple of months ago. And as if a friend knows that this week has avocado as a prompt, he bought for us avocado, knowing that we love it for our salad! He bought a staggering 9 kilos of avocado! Waaaaah! 😍😮 We have a feast! He said that it was cheap, only P70 (USD 1.20) per kilo! And yes, it is very cheap! Because here in our city, the price is almost doubled! 😢

Yesterday, I excitedly prepared the avocado to be mixed with our usual salad with shrimp as a plus. 😉 And I call it:

SHRIMP AVOCADO BOAT

INGREDIENTS:

1 tbsp olive oil
1 cup peeled shrimp
1 onion
1 garlic
1/2 tbsp salt
1/2 tsp black pepper
1/2 tsp oregano powder
1/3 cup roasted sesame dressing
1 Philippine lime
2 avocado
1 tomato
1/2 pc carrots
1/2 pc cucumber
1/4 pc cabbage
Oregano leaves
Spring onions

DIRECTION:

  • In a pan, sauté the diced onion and garlic, then add the shrimps and cook until shrimps turn orange. Put the sliced carrots and tomato. (This is optional. You can either have it half cooked or raw with the vegetable salad. We only cooked carrots and tomato because my father finds it hard to chew.) Add pepper and season with salt.

  • In a separate bowl, combine the roasted sesame dressing, Philippine lime juice, oregano powder and black pepper.
  • Cut the cucumber and cabbage in strips. Scoop the flesh out of the avocado and reserve the skins. Dice the avocado.
  • In a bowl, put the sliced cucumber, cabbage, and avocado. Add the shrimp, carrots and tomato. Toss to combine. Add the dressing and gently stir until everything is well coated.

  • Put the mixture into the avocado skin. Garnish with oregano leaves and spring onions.
