Sliced Beef in Sour Soup is a delicacy commonly found in Sichuan restaurants in China, but it’s not easy to get to try it in Belgium. So you can imagine my immense joy the moment I saw it on a menu in a restaurant in Düsseldorf. :D
The thin beef slices are quickly boiled to keep them fresh and tender. Another main ingredient is the enoki mushroom. As it has a long and thin stem topped with small buttons, we call it “golden needle mushroom” in Chinese. In the sour and spicy soup here, you can also find mung bean sprouts and rice noodles.
