Scrumptious Bars To Pair With Tea Or Coffee

These bars are a family classic, the original recipe calls for apples alone... sometimes, I add nuts, other fruits or berries as I like it .... and I bake these more often than any other pastries I prepare because they are simply delish and an easy peasy task. So when I have extra unused apples or shall I say old apples, I simply slice them, sprinkle them with lemon juice so they won´t get dark and put them on the side for later use... then I prepare the batter.

Ingredients - Batter
250 g Flour
150 Sugar
100 ml Oil
100 ml water
4 Eggs
1/2 pack baking powder
1 pack vanilla sugar
Juice of 1/2 Lemon
1 Tablespoon honey
Ingredients - Toppings
2 medium apples, cored, halved and sliced
1 nectarine, cored and sliced thinly
1/3 cup dried raspberries or raisins
1/3 cup crumbled pecan nuts. other nuts like walnuts or almond would also do

The Batter
The batter is not that difficult to make since I am only combining the ingredients listed . The easiest way to prepare is to have 2 baking containers. Use the 1st container to beat the egg yolk and sugar and vanilla sugar and the lemon juice. When a fine consistency is achieved for the mixture, sift the baking powder and the flour into it little by little and mix with a spatula or wooden spoon, add the water and oil alternately for a smooth consistency.
In the 2nd container, beat the egg whites until peaks develop and add this to the flour mixture in 1st container, mix until the egg whites are combined nicely with the flour. Place the batter in a lined baking pan.
The Toppings
Arrange the apple/fruit slices in a fan like way by pressing them in the batter. I sometimes I add nuts and other fruits also sliced the same way as the apples.I sprinkle the honey on top of the batter to make it glossy. It gives it a nice brownish color too. Bake in a preheated oven of 170°C, middle oven rack for about 20-25 minutes. Let the cake cool and then cut the cake in bars. you may sprinkle the top with caster sugar (optional).

This can also be prepared in advance and can be frozen too, if you are expecting guests, these sweets could also be a scrumptious dessert to serve, top with nuts and whipping cream, they will be a talk of your visitors.
