
Hello dear Steemians!
This is my first time to join Tasty Tuesday and here is a table for two I prepared for lunch. I went for a haircut sometime this week and just a few walk from the hair saloon is the mini market. I went inside and saw spinach leaves that were freshly delivered, they were so green that I got me a bundle. There were curly parsley, so I got those too.

I definitely have no plan what to cook on that day as I mostly cook spontaneously, but the fresh leaves gave me ideas what to cook. And since I have vegetables shopped from the day before, I got excited and proceed to the kitchen to start with cooking.

I´ve had butternut squash, aubergine, green beans, red bell pepper and zucchini. All of these veggies were cut into bite pieces then steamed for a short period of time, removed from steamer to a bowl and set it aside.

The Mixed Veggies
In a hot pan with 2 tablespoon olive oil, I fried 2 cloves of crushed garlic, add the cubed onions and fried til all were golden brown in color, then I added the steamed veggies, stir-fried all for about 2 minutes. I added a cup of vegetable stock, sprinkled 2 tablespoons of Teriyaki sauce and let it simmered for about 2 minutes until the vegetable stock got lesser from evaporation. In a cup, I dissolved 1 tablespoon of cornflour with 1/2 cup water and add this to the veggies, mixed carefully until the remaining liquid became thicker. Spiced with salt and pepper ..... then placed on a serving dish below.

The Sauteed Spinach
Half of the bunch of spinach were blanched then sauteed shortly until just about limped then sprinkled with soy sauce , spiced with salt and pepper. It was ready anytime for serving (see below result).


The Fried Rice With Spinach
The other half of the spinach were cut and fried and was added as a twist to the fried rice. The rice was actually remainder from lunch the day before and so to make it taste more interesting, I added the cut spinach to it. Spiced with salt and pepper, it´s cooked in nu time


The Fried Chicken Breast
And finally, I marinated the chicken breast using a ready made spice for grilled chicken. That is all what it needed and I deep fried it until all sides were golden brown and crispy. I served it pre-cut and garnished the plate with curled parsley to make it look appetizing.

The table was prepared and the food arranged, I and hubby were fully satisfied with what I served.
