Ingredients

  • 600 grams of carrots
  • 50 grams of grated Parmesan cheese.
  • 1 teaspoon chopped basil.
  • 1 lemon.
  • Oil.
  • Salt.

Preparation

Scrape the carrots and put them in a pot with boiling water and salt. Sprinkle with lemon juice and cook for 15 minutes over medium heat. Drain and let cool. Slice diagonally. In a frying pan, heat 1 glass of oil and add the carrots. Sauté for 5 minutes. Drain almost all the oil. Add the grated cheese and cook for 2 more minutes. Sprinkle with chopped basil.
