If you're wondering what to do with the abundance of courgette that came from your own garden or that was gifted to you by someone, just like me, then this might be a nice option:
Vegan courgette soup with coconut curd and mushrooms.
Ingredients:
Courgette
Two cloves of garlic
six mushrooms
bouillon powder
pepper
salt
oregano
thyme
coconut curd
This is curd made out of coconutcream and yoghurt culture. You can make it yourself if you want, from the cream or from the fresh coconut. This you tube shows you how to do it from the fresh coconut:
Start by boiling enough water.
Cut up the courgette.
Cut up the mushrooms.
Fry them with the chopped garlic salt and pepper.
Keep them aside.
when the courgette is soft, blend it.
Add enough bouillon powder and the oregano and thyme,
salt and pepper.
Done!
Serve on a plate so that the dollop of coconut cream doesn't sink down to the bottom, sprinkle the mushroom over the top and enjoy!
I made soup for guests and for a whole other week and still I have only used half of this gigantic courgette!
Now I only have to think of what else to be doing with it!
