This Wednesday was full of what I like to call rainy day activities - I helped my mom organize the closet in my parent's bedroom, I went to the library and picked up six books, baked muffins, watched football while drinking coffee.

Even though I already shared this recipe long time ago, I will do it again since I took some photos so why not..? :D

Carrot Cake Muffins Recipe

You will need:

1 cup flour,
3/4 cup sugar,
1 teaspoon cinnamon,
1 teaspoon baking soda,
1/2 teaspoon baking powder,
1/4 teaspoon salt,
1 1/2 cups grated carrots,
2/3 cup oil,
2 eggs, beaten

Preparation:



Preheat the oven to 180 degrees Celsius. In a bowl, combine flour, sugar, cinnamon, baking soda, baking powder and salt.

In a separate bowl combine carrots and oil. Slowly add the dry mixture, stirring until just mixed.

Add the beaten eggs and stir a few times.

Fill the muffin tin (I also used muffin cups) and bake for 15 minutes.

The final product - so yummy!
