Good morning steemit. Another sweaty, humid tropical day is upon us. Though I am loving the rains in the hot season as the garden looks green again.... the humidity is another thing.
Luckily I start to work early and finish early too to go for a cooling afternoon swim. Can't wait to take some time off in the near future. Ever since we opened our bakery one year ago....gosh times flies... we haven't really taken a break and we are all starting to feel the need.
One and a half more month before I go to Belgium to visit family and friends.... and finally meet my godchild. Exciting times ahead.
CREAMY CASHEW PAPAYA MORNING BLISS
INGREDIENTS (SERVES 2)
1/3 cup cashew nuts, soaked
2 cups spinach
1 small papaya
1 carrot
½ cucumber
½ avocado
1 organic lime, fruit + zest
2 cups of coconut water
DIRECTIONS
- Soak cashews for at least 4 hours. Overnight is best to neutralize phytic acid. Phytic acid interferes with the absorption of other nutrients and can cause nutrient deficiencies.
- Blend spinach and coconut water until smooth. Add remaining ingredients and blend again. If you have a high-speed blender you can throw everything in at once.
- Top with superfoods such as hemp hearts and goji berries if you like.
