Greetings steemit food lovers. Though it has been a while since I posted a smoothie recipe I still make them every day. Whether I whip one up for breakfast or have one has a post- or pre-workout snack, my day isn't complete without a glass of plant-based goodness.
What about you are you a smoothie lover too? And I am not talking the pre-made sugar-laden ones you buy at the grocery store.
As I have said probably a zillion times before, nothing beats the taste and healthiness of homemade. Only then you are absolutely in control of what you are putting into your body.
Though this makes an excellent morning drink I had one after today's workout. Every day I try to squeeze in at least a 15-minute HIIT or Tabata session to bring up a sweat. And sweaty it is today. After a chilly rainy day we had yesterday, today is humid and tropically hot.
SUPERFOOD PEANUT BUTTER SMOOTHIE
INGREDIENTS (serves 2 to 4)
1 carrot, peeled and roughly chopped
3 big leaves napa or Chinese cabbage (bok choy or spinach works too)
2 passion fruits
1 small mango
1.5 cup papaya chunks
1-2 tbsp peanut butter (I used homemade)
2 tbsp hemp hearts
1 tbsp goji berries
1/2 cup fresh mint leaves
Toppings: coconut flakes, goji berries, mulberries and cranberries
Water as needed

DIRECTIONS
Blend Chinese cabbage and water until smooth. Add the remaining ingredients and blend again. If the smoothie is too thick for you, add more water and blend again.
If you have a high-speed blender you can blend everything at once.
Optional: Top with superfoods/topping you like.
