Hi darlings and happy weekend! If you have been following me for a while, you know I love to try out crazy delicious combinations of nicecream, or if you dont know the expression nicecream, let's say vegan ice cream! Yes, this is my latest combination that I really love! Want to try it out? Go for it!
This week has been quite different from many other because I spent it alone with my little boy and didn't get much time left for Steemit, Instagram or other work and blogging-related stuff, but I didn't mind at all actually, I really enjoyed some free time and cozy summer days with my toddler. As the weather was super hot, we went outside after breakfast most of the days for a short shopping tour in the grocery shop and stayed at home during the hottest time of the day until late afternoon when we went to the water for play and a swim.
It was great, and we had much time just doing nothing.
Lately, my little boy has waked up at night and stayed awake for 2-4 hours every night, which really got me exhausted, and it takes normally about 1 or 2, sometimes even 3 hours for him to fall asleep in the evening, so this week I have decided to stop this torture and changing our routines. He has always been sleeping for 1 or 2 hours during the day for his afternoon nap because he simply gets very tired at that time. But because he has such difficulties to fall asleep in the evening lately, I decided to stop this and skip the afternoon nap. And voila, he falls asleep in 10-15 minutes at 7 or 8 pm now, and doesn't even wake up at night anymore! I dont know why I haven't done this before, lol, I am feeling so free and enjoying the extra time for myself at evening and sleeping more because of this.
But I also miss that little nap during the day, because I would normally sleep or rest with him when he was taking his nap, but unfortunately, this doesn't work anymore. Sometimes I wish he could stay a baby forever, but I am also so proud and happy to see how independent he is and how he grows and learns from day to day. To be a mother is the biggest gift and lesson in life.
Let's share the recipe for the healthy ice cream, shall we?
LAVENDER-STRAWBERRY ICE CREAM WITH HIDDEN VEGGIES

Recipe
Makes enough for 2 portions.
Ingredients:
- 3 ripe frozen bananas
- 1 handful frozen zucchini
- 1 cup frozen strawberries
- 1 drop essential lavender oil
- Splash coconut milk
Method:
- Put all the ingredients in a blender or food processor, and blend until creamy! Add in bowls and enjoy with your favorite toppings! (such as vegan raw chocolate pralines;))
- Enjoy!
