Today, I baked some delicious stuffed bell peppers. π
The main reason for this choice was @nicoleslife's #VeganBakingContest. She has been a great supporter of my blog, and I really love her work. Make sure to check out her blog on Steemit!
Here is what you need:
- 5 bell peppers πΆοΈ
- 1000ml tomato sauce π
- 1 tomato π
- 300g brown rice π
- 50g grated vegan cheese π§ (optional)
- 200g textured soy protein flakes
- a lemon π
- a pinch of black pepper
- a pinch of salt
- a pinch of paprika
- a pinch of ground coriander seeds πΏ
- fresh parsley leaves, choppedπΏ
- fresh basil leaves, choppedπΏ
- fresh cilantro leaves, choppedπΏ
- a few dashes of teriyaki sauce
Let's begin!
- Cook the brown rice according to the package instructions. π
- In the meantime, heat up 200ml water and add the dry textured soy protein flakes. Let them sit for 10 minutes. Then drain the water and remove the excess water from the flakes (wrap a fresh dishtowel around them and press so that the water pours out. Then mix them up with spices and herbs ( black pepper, salt, paprika, ground coriander, chopped parsley, basil and cilantro). Also add the teriyaki sauce.
- Now mix the rice π and the soy flakes. Squeeze the lemon π and pour the lemon juice into the rice-soy mix. As an option, you can also add some vegan cheese. π§
- Hollow out the bell peppers. πΆοΈRemove all the seeds.
- Then fill the hollow bell peppers with the rice-soy mixture.
- Chop a tomato π and close the stuffed bell peppers with a tomato slice.
- Then put the stuffed bell peppers into a casserole dish.
8 . Add the tomato sauce. π
9 . As an option, you can decorate them with some grated vegan cheese. π§
10 . Then put the casserole dish into a preheated oven for about 20 to 25 minutes at about 200Β° degrees Celsius (~400Β° Fahrenheit).
11 . Keep looking now and then if the peppers are ready. If parts of them become dark, they are ready.
Put them on a plate and enjoy! π½
