Have you ever wondered what it would be like if a Unicorn flew down from heaven and took a soft serve rainbow poo onto a plate and then a leprechaun popped out and threw chocolate covered bacon bits on top of it? Neither have I, but I guarantee that this recipe you are about to watch is a million times better than that would ever be.
I was going to make jalapeno poppers and wrap them inside the chicken, but decided that it would taste better to just have the jalapenos diced up inside the cheese spread. We have plenty of jalapenos and cheese left over so we made some poppers, but we ended up eating them all while the chicken was being smoked.
If you have never had meat on a smoker, you are missing out. That is the only way that I cook Thanksgiving Turkey now. The meat is a lot juicier and has such a better flavor.
