Esta receta, y todas en general, son veganas por su propia razón de ser y sin gluten. Así, con mucha práctica, aprendemos a preparar diferentes recetas, así que compartiré esta historia de vida con ustedes en la cocina.

Los ingredientes y utensilios que me ayudarán a realizar esta receta serán los siguientes: Agua, con dos 1/4 tazas, aceite de girasol dos 1/4 tazas medidoras, azúcar 2 1/4 tazas, nuestra harina Estrella, una harina de yuca vegana y sin gluten por supuesto, 2 zanahorias, una pizca de sal, un bol, un batidor de varillas, moldes para cupcakes, capacillos para cupcakes.

Empezamos, o empecé yo, con la zanahoria, lavándola y pelándola para quitarle la cáscara.

Procedemos con los vasitos de zanahoria previamente rallados.

Procedemos con la harina. Esta harina es diferente a la que se usa en la repostería convencional, pero su calidad es excelente. Solo es cuestión de adaptarla a tu dieta.

Este molde es grande, así que me quedó justo la cantidad para 6 cupcakes grandes. Puedes añadir los frutos secos que quieras. Hice estos muy sencillos, probando la receta, pero quedaron riquísimos.

Una vez que nuestros cupcakes hayan pasado 30 minutos en el horno a 180 grados, estarán listos, aromáticos y deliciosos. Es toda una experiencia. Una vez fríos, les añadí un poco de zanahoria rallada para darles un toque especial.
