Food Fridays #5

Last Sunday I decided I'd had enough American food and needed to get back to some delicious Japanese food. Southern California has had a lot of Asian restaurants open up in the past 5-10 years, almost a boom. Many of those restaurants have been Japanese and I've eaten at quite a few of them however, I hadn't eaten at Shin Sen Gumi Hakata Ramen before so I thought I'd give it a try.

A little back story to Shin Sen Gumi. The Shin Sen Gumi were a police force of samurai. One of them, KONDO Isami, was from Chofu, Tokyo. I would often walk by his birthplace, now a temple, on my way to the office so I always remembered who he was. When I saw Shin Sen Gumi open many years ago in Fountain Valley, CA. I was instantly brought back to Chofu and the memories of walking by temple. While I had eaten at Shin Sen Gumi in Fountain Valley many years ago, I had not eaten their ramen.

Shin Sen Gumi Hakata Ramen has several locations in Southern California. The location I went to is in Irvine, just off the 5 freeway. It's located in a newer part of Irvine surrounded by new housing tracts. When I was a kid this whole area was strawberry and vegetable farms as far as you could see. It's strange to see all of that gone and developed now.

As I was seated I found that ordering was simple, like a sushi restaurant you are given an order sheet to select what you want, base, oil, noodles & toppings. This is a great system as it allows you to customize your ramen quite a bit. I went straight down the middle and added some extra charshu and a nitamago (boiled, flavored egg). Ramen just isn't ramen to me without a nitamago. Gotta have one. Oh, and a large Sapporo. Beer & Japanese food are matches made in heaven!

This night they were very busy so I had to wait about 10 minutes for a seat, and then about another 10min for my ramen. They of course tortured me by sending out my toppings first! So, my toppings sat for a few minutes before the ramen arrived.

Then, the moment of truth, the bowl of magic. The presentation was good, but lacking a bit.

The soup base was tonkotsu, boiled pork bones, and just ok. Not very flavorful, but it was acceptable for California. The next thing I noticed after the base was the "men", noodles. These were great, just how I like them, thin and stringy. They would save the dish for me.

Then it was time for the charshu, a berkshire pork. I am not a big fan of this type of charshu. I need thick, fatty pork that melts in your mouth, kakuni style. The type of charshu they provided is a simple topping that leaves your taste buds neglected. It's just not a serious charshu, too thin and lacking that delicious fat.

Next up was the nitamago. I was very disappointed with this nitamgo. You can see in the photos it's lacking that color from soaking in the blend of mirin, shoyu, sake & tsuyu. My wife makes these and they are soooo delicious. Additionally, any ramen shop worth a crap will boil that egg perfectly so the yolk is still liquid inside. Cooking ramen is an art and doing it right takes time and years of practice.

Oh right, the egg. So, it was basically a hardboiled egg. I drank my beer and tried not to think about it while enjoying the better parts of the ramen. Then I remembered, gyoza! Gyoza always makes things taste better so I ordered a set. The gyoza were very small, like smaller than my pinky. I honestly thought they were kids gyoza. They tasted ok though so I breathed a sigh of relief.

As I finished up I thought to myself, this is a very mediocre ramen. If I'm going to spend money I need to go to eat some banging ramen at Yamadya or Santouka! So I pulled up a map and realized, wow, there are a lot of ramen places around now, maybe I should go try them all and report here on Steemit!
