Happy start to the week for all the foodies in the Hive community! Today I'm sharing this viral sandwich idea made with baked eggplant and no flour. It's easy, delicious, and above all, filling. Plus, the melted, crispy cheese gives it a unique and special touch.

Ingredients for two sandwiches:

1 large eggplant 1 cup of arugula or rocket 80 g of bacon 150 g of mozzarella cheese 80 g of Gouda cheese 2 teaspoons of salt 1 liter of water

Feliz inicio de semana para toda la comunidad más foodie de Hive, hoy les comparto esta idea de sandwich viral hecho con berenjenas al horno y sin harinas. Es fácil, delicioso y sobre todo saciante, además el queso derretido y crocante le dan un toque único y especial.

Ingredientes para dos sandwiches:

1 berenjena grande 1 taza de arugula o rúcula 80 gr de tocineta 150 gr de queso mozzarella 80 gr de queso gouda 2 cucharaditas de sal 1 litro de agua

Preparation:

Cut the clean eggplant into thin slices and soak them in water and salt for 30 minutes. After this time, remove them from the water and let them drain sufficiently. If you wish, you can rinse them with water and then let them drain and dry. Once the first step is done, place half of the slices in a square shape on a baking sheet and cover with half of the mozzarella cheese, which should be grated or chopped into thin strips. This step will be divided into two batches to bake one sandwich and then the second. Bake for 25 minutes or until the cheese is golden brown at a temperature of 200°C.

Preparación:

Cortamos la berenjena limpia en rodajas finas y las ponemos a remojar con el agua y la sal durante 30 minutos. Transcurrido este tiempo sacamos del agua y dejamos que se escurran lo suficiente, si lo deseas puedes enjuagar con agua y luego dejar escurrir y secar. Una vez hecho el primer paso ponemos la mitad de las rodajas formando una especie de cuadrado en una bandeja para horno y cubrimos con la mitad del queso mozzarella, el mismo debe estar rallado o lo puedes picar en tiras finas; este paso lo vamos a dividir en dos tandas para hornear un sándwich y luego el segundo. El tiempo del horneado es de 25 minutos o hasta que el queso esté dorado a una temperatura de 200 C°.

Repeat this same procedure with sandwich number 2, arranging the rest of the eggplant slices in a square shape, covering with the rest of the mozzarella cheese, and baking until the cheese is golden brown.

Este mismo procedimiento lo vamos a repetir con el sándwich número 2, distribuimos el resto de las rodajas de berenjena en forma de cuadrado, cubrimos con el resto del queso mozzarella y horneamos hasta que el queso quede dorado.

Then, for the filling, brown the bacon over medium heat in a frying pan with its own fat. When it is ready, set it aside for plating. Make sure the arugula is also clean. I like to disinfect fruits and vegetables with a food disinfectant, but you can do it your usual way.

Luego para el relleno, doramos el tocino a fuego medio en una sartén con su misma grasa, cuando esté listo lo reservamos para el emplatado. La arugula asegúrate de que también esté limpia, a mi me gusta desinfectar las frutas, verduras y vegetales con un desinfectante de alimentos pero tú puedes hacerlo con tu forma habitual.

Finally, fill each sandwich with half of the Gouda cheese, bacon, and arugula, and repeat with the second sandwich. If you like, you can choose another type of filling, something you like or have in the refrigerator that you think goes well with eggplant.

Finalmente rellenamos cada sandwich con la mitad del queso gouda, tocino y arugula y repetimos lo mismo con el segundo. Si gustas, puedes optar por otro tipo de relleno, algo que te guste o que tengas en la nevera y crees que combina con la berenjena.
