Garlic Curry Baked Drumsticks - Lori's Cookbook

This is my entry for this week's @foodfightfriday.

I don't often cook curry, but maybe I will do so more frequently now. I had forgotten what a nice flavor it is! I was challenged to do this by @cookwithus (Whaleshares) and found an interesting recipe over at Primal Palate - I only made very small tweaks to the recipe, mostly in the seasoning.

Here is what it looked like when it was done.

So, how to make...

Garlic Curry Baked Drumsticks

Preheat the oven to 425F.
Melt 3-4 Tablespoons of butter in a saucepan.
Mix up the seasonings.
Combine equal parts (2 teaspoons each):

  • chili salt (50/50 chili powder and salt
  • garlic powder
  • onion granules
  • salt
  • curry powder

Brush the melted butter over the drumsticks (this covered all 13 drumsticks I had in the Pyrex dish.
Sprinkle the chicken liberally with the seasoning. (I used about half.)
Bake the chicken for 50 minutes or until the chicken is no longer pink in the middle.

I served it with Curry Rice (which I made with the Turmeric Rice recipe below, but substituted curry powder for the turmeric) and salad.
