Good morning steemit. Last day at work before my weekend starts. Really looking forward to doing absolutely nothing. Though We just had a week Holiday the other week, having 2 friends over from Belgium was super fun but tiring too.
This weekend will be all about peace and relaxation. Sounds like a good plan to me.
Got some homegrown cherry tomatoes ready and our Chinese kale is growing happily too. Bananas are on the way and we have a constant supply of star fruit these days. Pure bliss. Can you see why I am really looking forward to staying home with my hubby, cat and 7 cows that are happily living on this 4-hectare plot of land.
Though those 7 cows are not ours, the owner of the land lets them roam free and they are not meant for eating. Their only job is to keep the grass short.

INGREDIENTS (serves 2 for breakfast)
2 cups baby spinach
1 medium carrot peeled and roughly chopped
1 small raw red beet peeled and diced
1.5 cup strawberries (fresh or frozen)
1 medium banana, peeled and frozen for extra creaminess
1-2 tbsps extra virgin coconut oil
1/4 fresh mint
1/2-inch piece fresh ginger
1/2 cup homemade cultured coconut yogurt
Water as needed
Optional topping: hemp hearts
DIRECTIONS
- Blend spinach and water until smooth. Add the remaining ingredients and blend again. If the smoothie is too thick for you, add more water and blend again. If you have a high-speed blender you can blend everything at once.
- Optional: Top with superfoods/topping you like.
