Put this recipe aside for next holiday season, because everyone (well, almost everyone) loves a good pumpkin pie, and this one was a true winner - especially if you're trying to keep your carb count down.
(Low carbers might want to sub a lower-carb option for the sugar and flour.)
This is my entry for this week's @foodfightfriday challenge.
Crustless Pumpkin Pie
Preheat oven to 375F or 180 C.
Beat:
- 3 eggs
Add in:
- 2/3 cup brown sugar
- 7 Tablespoons (scant 1/2 cup) sour cream or crème fraiche
- 2 cups pumpkin purée (mine is homemade)
Mix thoroughly.
Stir in:
- 2 1/2 Tablespoons flour (you might use 1 T gelatin instead for lower carb)
- 2 teaspoons ground cinnamon
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
Mix until well blended. (I only used the whisk, so it doesn't have to be perfect.)
Pour into a greased 9-inch pie pan.
Bake 25-30 minutes until the center is set but still jiggly.
Let it cool completely, then chill at least 4 hours.
Serve with cream (whipped which is traditional in the US - or runny which is more traditional in the UK.)
My opinion? This is definitely a keeper. I'd like to play with it for lower carb options still so that my holiday binge doesn't completely destroy my hard work to improve my health! (I just had an idea that it would work very well crossed with a cheesecake! MMMM!)
