When the garden gives you fresh bananas make banana cinnamon ice cream. Healthy, delicious and 100% plant-based. Though I had this yesterday after dinner, you can also eat it for breakfast on a hot day.
Ice cream for breakfast... I bet your kids will love that too. I am definitely going to make this for my godchild when we go to Belgium in a few months. Too cold there now for this tropical heat loving girl. My mom sent me pictures of a snowy garden the other day so I reply with sunshine-filled pics of bananas, my lovely furry friend and the garden.
I am feeling so blessed to live among all those fresh tropical fruits. We harvested a big bunch of bananas the other day and so much more are coming soon. Mango season is in full swing too. Papaya on the way and starfruit seems to be an endless supply.
Unfortunately, the guava tree is going to need some TLC. Not sure what's wrong with it but my friend and tree doctor is on it.
SUPERFOOD CINNAMON BANANA ICE CREAM 🍌🍌🍌
INGREDIENTS (SERVES 2-3)
3 bananas, chunked and frozen
Cinnamon to taste
Coconut or almond milk as needed
Topping: dried goji berries, cranberries, mulberries, coconut flakes, and chopped pistachios
DIRECTIONS
- Peel, chop and freeze bananas. When frozen, add them to a blender and process adding nut milk and cinnamon to desired texture of a soft serve ice cream.
- Top with your favorite toppings. I used dried goji berries, cranberries, mulberries, coconut flakes, and chopped pistachios.
