The Christmas holidays with plenty of food are behind us (as I usually gained weight again) and New Yearβs Eve feasts are near. It is necessary to stop a little with this heavy food and eat something light.
Here is one very simple recipe with cauliflower that anyone can make:

We need (for 4 people will be enough):
- 1 medium-sized cauliflower head, around 1kg
- a few tablespoons of yogurt
- a couple of cloves of garlic
- olive oil
- apple cider vinegar
- salt and pepper as desired

The head of cauliflower is washed, cut and boiled in hot water. Add salt if desired.

While the cauliflower is cooking, there somewhere 10-15 minutes, depending on how firm you want, I prefer hard, prepare a yogurt dressing.

Squeeze the garlic into a cup first, add salt and pepper, a couple of tablespoons of olive oil, a couple of tablespoons of apple cider vinegar and yogurt. Then mix everything well. If it's too thick or too sour, add more water. Mix well.

Cauliflower is cooked to our taste, not too hard, not too soft. But everyone has to try how boiled cauliflower suits them :)
Drain the hot water and cool the cauliflower with cold water.

Serve with yogurt dressing.
