Vegetable Soup With Noodles And Breaded Chicken

This recipe, vegetable soup with breaded chicken is the perfect meal and we don’t need any side dishes next to it. We can put many things in vegetable soup, usually fresh vegetables from the garden, but in winter it depends more on what we have in the fridge and freezer.

Of course, it can also be prepared without meat, as anyone wants. Well, that's my version :) 😎

I looked in the fridge and estimated that for four people I need:

  • 1 red pepper
  • 2 carrots
  • 300 grams of cauliflower
  • 1 zucchini
  • 4 eggs
  • 1 medium onion
  • 250 grams of noodles
  • 4 leaves of Chinese cabbage
  • olive oil
  • some dried bay leaves
  • salt and pepper and other spices as desired

First, we boil 4 eggs hard. When the water boils (on the inductor stove it's in a minute), cook for another 10 to 11 minutes.

While the eggs are cooking, start by cutting the vegetables. I put it on strips (otherwise it takes longer if you do it manually), you can do it differently. Once the vegetables are sliced, take one larger pot and add a few tablespoons of olive oil. Place on the stove and heat. When the oil heats up, first add the onions and fry for a minute, then the rest of the vegetables. Add spices. I added a teaspoon of salt, a teaspoon of pepper, few bay leaves, and a teaspoon of turmeric.

Roast for another five minutes and then pour in a liter of water (more or less, judge this by the amount of vegetables). When the water boils, reduce the boiling to a minimum and cover to allow the vegetables to cook slowly.

The soup cooks slowly, the vegetables soften. Peel hard-boiled eggs. It's easiest to immediately pour ice water over them when they are cooked, then peel them easily.

Since I mentioned adding meat, I took frozen breaded chicken steaks (which we prepared about three months ago and need to be consumed) from the freezer and put them in the oven. This takes 15-20 minutes, depending on the oven.

I had 250 grams of Chinese Chow Mein noodles. Otherwise, they are more suitable for some other dishes, not for soups, I could put some spaghetti but I like these more because when they're cold they don't stick together. And they're cooked even faster.
Bring the water to a boil and when it boils, turn off and add the noodles. After four minutes, they are cooked. It is important to wash them with cold water and then they do not stick anymore.

Well, now we have it all. The vegetable soup is cooked, of course, we taste it and if necessary add salt and pepper. The eggs are boiled and chilled. The noodles are ready and the meat is baked. Now we just serve.
All on one plate. First, the noodles, then the vegetables, pour over with a spoonful of broth, cut the meat into strips, and add half a hard-boiled egg. I'm sure everyone will want more :)
